Apple cider vinegar adds a tangy flavor while being healthier.

Prepare mixed vegetables by washing and chopping them into bite-sized pieces.
In a dry pan, toast mustard seeds and fenugreek seeds until fragrant, about 2-3 minutes.
Grind the toasted seeds into a coarse powder using a mortar and pestle or spice grinder.
In a mixing bowl, combine the chopped vegetables with turmeric powder, red chili powder, and salt.
Add the ground spice mix to the vegetables and mix well to coat evenly.
Pour in vinegar and lemon juice, then mix again thoroughly.
Add sugar and mix until dissolved, adjusting sweetness to taste.
In a small pan, heat oil until shimmering, then add asafoetida and cumin seeds, cooking for 30 seconds.
Pour the hot oil mixture over the vegetable mix and stir well to combine.
Transfer the pickle to a clean, dry jar and seal tightly.
Let the pickle sit for at least 24 hours to develop flavors before serving.
