Chop a whole onion into cubes.
Crush and finely mince garlic.
Deseed and chop half a chili into small pieces.
Cut the green bell pepper into similar cube sizes as the onion.
Use two handfuls of shredded carrots instead of grating.
Destem half a tablespoon of thyme.
Open a can of chopped tomatoes and a can of beans in tomato sauce.
Heat 2 tablespoons of olive oil in a pot over medium-high heat.
Sauté the onion until semi-translucent.
Add minced garlic, chili, and spices to the pot.
Add the chopped vegetables and sauté for 2-3 minutes, keeping them crunchy.
Dump the tomatoes into the pot and turn down the heat to medium.
Season to taste and cover the pot for 2-3 minutes.
Add the beans and let the mixture simmer down into a relish.
