75g/ 6 tbsp butter
115g/ ½ cup soft brown sugar
75g/ ¼ cup golden/light corn syrup
75g/ ¼ cup treacle/molasses
105ml/ 7 tbsp milk, room temperature
1 egg, beaten, room temperature
175g 1 ½ cup plain flour
50g/ ½ cup gram/chick pea flour (or you can substitute with almond flour)
pinch of salt
1 ½ tsp baking powder
2 tsp ground ginger
1 tsp ground cinnamon

Preheat the oven to 160C/325F.

In a mixing bowl, combine the butter and soft brown sugar until well mixed.

Add the golden corn syrup and treacle/molasses to the mixture and stir until combined.

In a separate bowl, whisk together the milk and beaten egg.

Gradually add the milk and egg mixture to the butter and sugar mixture, mixing well.

In another bowl, combine the plain flour, gram/chick pea flour, baking powder, ground ginger, ground cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Pour the batter into a greased tin (21.5cm x 11.5cm).

Bake in the preheated oven for about an hour.

Leave the gingerbread in the tin for 5 minutes, then transfer to a wire rack to cool.
