1/2 cup dark brown sugar
1 cup molasses (unsulfured, Grandma's brand)
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour

1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
3/4 teaspoon salt

Preheat oven to 350 degrees Fahrenheit.

In a large bowl, combine 1/2 cup softened unsalted butter and 1/2 cup tightly packed dark brown sugar. Beat together until creamy using an electric mixer.

Add 1 cup of unsulfured molasses to the mixture and beat until combined.

Stir in 1 large egg and 1 teaspoon of vanilla extract, mixing until nicely combined.

Scrape the sides and bottom of the bowl to ensure ingredients are well incorporated.

In a separate bowl, combine 2 1/2 cups all-purpose flour, 1 1/2 teaspoons baking soda, 1 teaspoon ground cinnamon, 1 teaspoon ground ginger, 1/2 teaspoon ground cloves, and 3/4 teaspoon salt. Stir until combined.

Gradually add the dry mixture to the molasses mixture, mixing until combined. Use an electric mixer if necessary.

Carefully add 1 cup of boiling water to the batter, mixing gently to avoid splatter.

Pour the batter into a lined 9x9 pan.

Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
