hot water
molasses

Sift the flour and set it aside.

Add salt, ground ginger, allspice, baking powder, and cinnamon to the sifted flour and mix.

In a bowl, pack and smash the brown sugar until it forms a solid shape.

Add 3 sticks of unsalted butter to the brown sugar and mix with a hand mixer.

Add 1 egg at a time to the mixture, mixing well between each addition.

Add hot water and molasses to the mixture and mix until combined, scraping down the bowl as needed.

Gradually add the flour mixture in two parts to avoid spraying flour everywhere, mixing until combined.

Take half of the dough, squish it around a bit, and cover it.

Place both halves of the dough in the fridge for a minimum of 2 hours, preferably overnight.
