1/2 cup sugar cane vinegar
6 cloves garlic
1/2 cup soy sauce
1 teaspoon black peppercorns
1 teaspoon floral spices
2 cups water
1/4 cup muscovado sugar
for serving heirloom rice
for garnish machara
for garnish natta de coco
for garnish fried garlic
2 bay leaves

Combine sugar cane vinegar, garlic, and soy sauce in a bowl.

Add boneless short ribs to the bowl with the vinegar mixture.

Add a handful of black peppercorns to the beef.

Crush three to four pieces of floral spices and add them on top of the beef.

Add a tad of water to the bowl to create braising liquid.

Cook the beef until the meat is braising, checking if it needs more water.

Once the meat is braising, add muscovado sugar to the pot.

Add a little more water to continue braising.

Cook for another 15 to 20 minutes until done.

Serve the adobo with heirloom rice, garnished with fried garlic and a bay leaf, alongside machara and natta de coco.
