In a small bowl, add fish sauce, tamarind concentrate, coconut sugar, freshly squeezed lime juice, and soy sauce. Stir until well blended and set aside.

In a large bowl, soak flat rice noodles in cold water for 15 minutes or according to the manufacturer's instructions, ensuring they are fully submerged.

In a wok or deep skillet over medium-high heat, add 2 tablespoons of canola oil.

Once the oil is hot, add chicken pieces in a single layer and let them sit for 30 seconds before stirring.

Quickly sauté the chicken pieces, stirring constantly until the pink color is almost gone, about 1-2 minutes.
