18 Organic Eggs
1 1/2 Cups Organic Half and Half
2 tsp Vanilla Extract
3 TBS Vanilla Extract
1/2 cup pureed Organic Dates

Add the Organic Dates to a food processor and chop until it is a relatively fine puree.

Add 6 or so of the eggs and 1 tsp Vanilla Extract to the food processor and mix for a couple of minutes.

Pour the egg mixture into a pan, leaving the majority of the dates in the food processor.

Add the rest of the eggs with another tsp of vanilla extract. Mix well, then pour the mixture into the pan.

Add 1 cup of the half and half.

Stirring constantly, heat the pan of custard mix on the stove. Measure the temperature as it heats and when the mixture reaches 140-142 deg. F, hold it at that temperature for 5 -10 min. I just move the pan on and off the burner to keep it at that temperature. You don't want it to get too hot or you will end up with scrambled eggs!

Remove the mixture from the stove and add the final 3 TBS of vanilla extract. Add another 1/2 cup of half and half.

Chill the mixture in the refrigerator (this is optional if you have an ice cream freezer with a compressor) then freeze the mixture in your ice cream freezer.
