Cut the plantains carefully, avoiding cutting too deep into the flesh.
Remove the skin from the plantains, making sure to clean off any liquid.
Heat oil in a pan over medium-high heat and fry the plantains, flipping them until they achieve a nice golden color.
Keep an eye on the plantains while frying to prevent burning.
Once golden, remove the plantains from the oil and crush them using the skin or a flat object.
Set the crushed plantains aside and re-fry them for about 1.5 minutes until they are strong and solid.
Remove the re-fried plantains and drain excess oil on a paper towel.
Crack the eggs into a bowl and whisk them together.
Season the eggs with jerk seasoning and all-purpose seasoning.
Spread mayonnaise on top of the fried plantains.
Add the seasoned eggs on top of the mayonnaise.
Layer the fried plantains on top of the eggs, followed by a sprinkle of cheese.
Top with another layer of fried plantains and place the top on the sandwich.
