Remove the pork and set aside, leaving the oil in the wok.
Add chopped onion and bell peppers to the wok and stir-fry for 3-4 minutes until slightly softened.
Add pineapple chunks and stir-fry for another 2 minutes.
In a bowl, mix rice vinegar, sugar, and water to create the sauce.
Return the pork to the wok and pour the sauce over the mixture.
Stir to combine and cook for 2-3 minutes until the sauce thickens.
Add cornstarch mixed with water to thicken the sauce further if needed.
Drizzle sesame oil over the dish and toss to combine.
Garnish with chopped green onions before serving.
