¾ teaspoon turmeric powder
¾ teaspoon salt
1½ teaspoons red chilli powder
2 tablespoons chickpea flour (besan)
½ teaspoon sugar
200 grams small potatoes, boiled till tender, peeled
2½ tablespoons ghee
1 teaspoon black mustard seeds
2 dried red chillies
1 teaspoon cumin seeds
20 curry leaves
¼ teaspoon asafoetida, powdered

Boil the small potatoes until tender and peel them.

In a pan, heat the ghee and add black mustard seeds, dried red chillies, and cumin seeds.

Once they start to splutter, add the curry leaves and asafoetida.

In a bowl, mix the ginger powder, turmeric powder, salt, red chilli powder, chickpea flour, and sugar.

Add the boiled and peeled potatoes to the pan and mix well with the spices and flour mixture.
