Caramel apples are a popular treat in the United States, especially during the fall season and around Halloween. They are made by coating apples in a sticky caramel sauce, often enjoyed at fairs and festivals. The combination of sweet caramel and crisp apples creates a delightful contrast that appeals to both children and adults.

Coconut cream is dairy-free and lower in calories.
Soak the apples in really hot water for 20 to 30 seconds, then dry them well with a towel.
Remove the stems and insert the sticks about halfway down the apples. Place on a sheet pan.
In a deep heavy bottom pot, combine the sugar, salt, butter, heavy whipping cream, and corn syrup. Set the heat to medium and stir continuously until the butter melts and it begins to bubble.
Brush down any sugar crystals clinging to the sides of the pot with a damp basting brush.
Let the caramel cook without stirring until it reaches 235 to 245 F (softball stage).
Turn off the heat and let the caramel cool for a minute, then stir in the vanilla extract gently.
Allow the caramel to cool to around 190 F for dipping.
Dip each apple in the caramel, allowing excess to drain off. Optionally, dip in chopped nuts.
Place the dipped apples on a sheet pan lined with parchment paper and refrigerate for 45 minutes to an hour.
Remove from the fridge and let sit for 10 to 15 minutes before slicing into bite-sized pieces.
