Today, variations abound globally, with many regions adapting the marinade and accompaniments to suit local tastes.

Start with 3 chicken breasts, saving one for later.
Make a marinade with 1 tablespoon chicken fajita seasoning, 1 tablespoon Montreal chicken seasoning, 2 tablespoons Dijon mustard, 1 tablespoon avocado oil, and mirin.
Mix the marinade and pour it over the chicken breasts, letting it marinate for a couple of hours or overnight.
Chop 1 large onion, 1 red bell pepper, and 1 green bell pepper into chunks for skewering.
Chop the chicken breasts into pieces and soak wooden skewers for about an hour.
Assemble the kebabs by alternating chicken, onion, sausage, and bell pepper on the skewers.
Prepare a homemade barbecue sauce by combining 1 cup ketchup, 1 teaspoon smoked paprika, 1 teaspoon Maggie seasoning, 1 tablespoon chipotle peppers, 1 teaspoon Dijon mustard, and 2 tablespoons molasses in a pan.
Simmer the barbecue sauce on low heat, adding dehydrated minced onion and cooking wine, adjusting to taste.
Grill the assembled kebabs on a tabletop grill using hardwood or lump charcoal until the chicken is cooked through and slightly charred, about 10-12 minutes.
Coat the kebabs with the barbecue sauce and grill for an additional minute to glaze.
