Originating from the Gaziantep region of Turkey, Kaymaklı Antep Baklava is a luxurious dessert known for its rich layers of phyllo dough, nuts, and a creamy topping of kaymak, a type of clotted cream. Traditionally served during special occasions and celebrations, this baklava is a testament to the artistry of Turkish pastry making. Today, it is cherished not only in Turkey but also in various Middle Eastern countries, where variations can be found, showcasing local ingredients and flavors.

Knead the dough starting with 3 cups of flour, adding a tea glass of tap water and 2 eggs.
Add a little salt and 2 tablespoons of vinegar to the dough mixture.
Knead until the dough is soft to hard and does not stick to the hands.
Cover the dough and let it rest for 5-6 minutes; optional to add a tablespoon of butter for richness.
Roll out the dough using a heavy rolling pin, dusting with plenty of starch to prevent sticking.
Open the dough into thin sheets, aiming for a size that fits a baking tray.
Layer the sheets, using 11 or 12 sheets in total, with starch in between to prevent sticking.
Spread a layer of pistachios in a single row after every 6 sheets of dough.
Pour cold cream over the pistachios, ensuring it's not too hard and absorbs syrup well.
Prepare the syrup by boiling 5 glasses of sugar with 4 glasses of water and half a lemon for about 5-6 minutes.
Cut the assembled baklava into diamond shapes with a spoon or knife before baking.
Bake the baklava in a preheated oven at 180°C for about 45 minutes.
Once baked, pour the hot syrup over the hot baklava immediately after taking it out of the oven.
