Preheat the oven to 375°F (190°C).
Line a baking sheet with parchment paper and grease lightly.
Whisk eggs and granulated sugar in a bowl until thick and pale, about 5-7 minutes.
Add vanilla extract and mix until combined.
Sift together flour, baking powder, and salt; gently fold into the egg mixture.
Warm milk and melted butter together, then fold into the batter until smooth.
Pour the batter onto the prepared baking sheet, spreading evenly.
Bake for 12-15 minutes, until the cake springs back when touched.
Remove from the oven and let cool for a few minutes.
Dust a clean kitchen towel with powdered sugar and invert the cake onto it.
Spread fruit preserves evenly over the cake, leaving a small border.
Roll the cake tightly using the towel to help, then wrap in plastic wrap.
Chill in the refrigerator for at least 1 hour before slicing.
Whip heavy cream until stiff peaks form and use to frost the outside of the roll.
Garnish with fresh fruit or chocolate ganache as desired.
