Add 2 tablespoons of refined coconut oil to the Instant Pot.

Set the Instant Pot to the 'saute' mode on the 'more' or 'high' setting.

Wait for the oil to melt and become clear, which takes about 5 minutes.

Add 5 popcorn kernels to the melted oil and cover with a glass lid.

Wait for at least 3 of the 5 kernels to pop as an indicator that the oil is hot enough.

Once the kernels pop, remove the lid and add 1/2 cup of popcorn kernels around the perimeter of the pot.

Shake the pot gently to distribute the kernels, then cover with the lid again.

Wait for the popcorn to start popping, which should begin after about 2 minutes.

Once the popping slows down, shake the pot again to ensure even popping.

Turn off the Instant Pot by pressing the 'cancel' or 'keep warm/cancel' button.

After 30 seconds, carefully remove the lid, being cautious of any remaining pops.

Remove the inner pot from the Instant Pot and pour the popcorn into a bowl.

Top with seasoned salt and drizzle with butter if desired.
