In a separate pot, rinse bulgur and drain.
Add bulgur to the pot with cooked lentils, along with water and salt.
Bring to a boil, then reduce heat, cover, and cook until bulgur is tender, about 15-20 minutes.
While bulgur and lentils cook, slice onions finely.
Heat olive oil and canola oil in a skillet over medium heat until shimmering.
Add sliced onions and cook, stirring frequently, until caramelized, about 15-20 minutes.
Once bulgur and lentils are cooked, fluff with a fork and serve the lentil and bulgur mixture topped with caramelized onions.
