fava beans (with water)

In a saucepan, add 2-3 tablespoons of extra virgin olive oil.

Finely chop 2 cloves of garlic and add them to the pan.

Finely chop 1 medium onion and add it to the pan.

Cook until the onion becomes translucent, not brown, just soft.

Add 1-2 finely chopped tomatoes and mix well.

Cover and cook for about 5 minutes to soften the tomatoes.

After 5 minutes, mix the tomatoes with a spoon, breaking down larger pieces to achieve a good texture.

Add 3/4 teaspoon of salt (adjust to taste) and 3/4 teaspoon of cumin powder.

Mix well to combine all ingredients.

Add the fava beans (do not drain the water) and mix thoroughly with the onion, tomato, and garlic mixture.

Cover and let it cook on low heat for about 5-8 minutes to soften the fava beans further.

After 5-8 minutes, uncover and mix well again.

Use a potato masher to mash the mixture slightly, keeping it chunky for better texture.

Add 2-3 tablespoons of fresh lemon juice and mix well again.

Finally, drizzle 2-3 tablespoons of extra virgin olive oil on top for added flavor.
