Sift in all-purpose flour, almond flour, cocoa powder, ginger, cinnamon, cloves, nutmeg, baking powder, baking soda, and salt.

Chill the dough for 30 minutes.

Wet your palms slightly, roll the dough into balls, and place them on a lined baking tray.

Bake at 180C for 12 to 14 minutes until they have a matte finish and visible cracks, still soft to the touch.

Let them cool on a cooling rack for 5 minutes.

For the icing, mix icing sugar, rum, and 1 teaspoon of water until flowable, adjusting water as needed for ribbon consistency.
