Combine 170 grams of muscovado sugar, 180 grams of honey, and 55 grams of softened unsalted butter in a large bowl and whisk together.

Add 2 eggs one at a time, beating well after each addition.

Sift 300 grams of plain flour into the mixture along with 150 grams of ground almonds, 2 tablespoons of cocoa powder, and the spices: 2 teaspoons of ground ginger, 1.5 teaspoons of ground cinnamon, 0.5 teaspoons of ground mace, 0.5 teaspoons of ground cloves, 0.25 teaspoons of ground nutmeg, and 0.25 teaspoons of allspice.

Add 0.5 teaspoons of baking powder, 0.25 teaspoons of bicarbonate of soda, and 0.5 teaspoons of salt, then sift everything together.

Add the zest of 1 lemon and mix until a smooth dough forms.

Refrigerate the dough for 50 minutes to firm it up.

Shape the dough into balls of 40 grams each and place them on a baking tray.

Roll out some of the dough to about 1.5 cm thick and cut out shapes with a cutter.

Preheat the oven to 160 degrees Celsius (fan assisted) and bake the cookies for about 12 minutes, checking for doneness.
