honey 200g
flour 200g
almonds 100g
baking soda 1/2 tsp
baking powder 1 tsp
cloves 5 pieces or 1/2 tsp
cinnamon 1 tsp
nutmeg 1/2 tsp
ginger 1 tsp
a pinch of salt
icing sugar 50g
boiling water 2-3 tsp
melted dark chocolate 50g

Melt the butter and honey using a bain-marie.

In a separate bowl, mix the rest of the ingredients.

Once the butter and honey mix is melted, combine with the flour and spices mix.

Put the dough in the fridge and let to cool down.

Once ready, with wet hands, form small balls and put them on a tin tray leaving enough space between them.

Bake the gingerbread cookies in the preheated oven at 185°C for 15 minutes or until golden brown.

For the glaze, mix the icing sugar with the boiling water. You can add more or less water until you get the right consistency. For the chocolate cookies, melt the chocolate and cover one side of the cookie then let to rest.
