Preheat the oven to 305°F (150°C).
Mix the spices for the lebkuchen: 35 g of cinnamon, 8 g of cloves, 2 teaspoons of cardamom, 2 teaspoons of nutmeg, 1 teaspoon of allspice, and 0.5 teaspoons of ginger in a bowl.
Use a fork to mix the spices together until well combined.
Beat 6 eggs in a mixer until foamy.
Add 2 tablespoons of honey to the beaten eggs and mix together.
Stir in the homemade lebkuchen spice mix and powdered sugar (amount not specified).
Prepare a clean surface for rolling out the dough.
Shape the dough into cookies and place them on baking sheets.
Melt chocolate in a pan on low heat for dipping the cookies.
Dip the tops of the cookies into the melted chocolate and place them on parchment paper to dry.
Allow the chocolate to solidify before serving.
