130g Honey
50g molasses
50g Butter
2 Eggs
300g Flour
150g Ground Almonds
2 tsp Ginger
1 tsp Cinnamon
1/4 tsp Nutmeg
1/4 tsp Allspice
1/8tsp Clove
1/2 tsp Baking Powder
1/4 tsp Bicarbonate of Soda
1/2 tsp Salt
Zest of 1/2 Lemon
Zest of ½ orange
75g Icing Sugar
20-25ml Lemon Juice

Cream Brown sugar, molasses, honey, and butter together with a hand mixer

Add the eggs one at a time mixing in between

Sift all the other ingredients into the mix

Add the zests

Mix well

Refrigerate 30 minutes

Weight pieces of 40g

Make them round

Place them on a baking sheet

Bake for 15-20 minutes at 325°F

The cookies should be golden

Let them cool down for 30 minutes

Whisk the powdered sugar and the lemon juice together

It should not be too thick because we just want a light glaze.
