1 cup / 200 g sugar
1 tbsp vanilla extract
1 egg + 1 egg yolk
⅓ cup / 100 g of honey
2 tbsp cocoa powder (unsweetened)
1 tsp ground cloves
1½ tsp ground cinnamon
1 tsp ginger
Zest of 1 lemon
Pinch of cardamom
Pinch of nutmeg
Pinch of salt
1½ tsp baking powder
3 tbsp whole milk
4 cups / 480 g all-purpose flour, plus extra for rolling
200 g powdered sugar

In a large bowl, cream together the softened butter and sugar until light and fluffy.

Add the egg and egg yolk, mixing well, then stir in the honey and vanilla extract.

In a separate bowl, combine the flour, cocoa powder, baking powder, ground cloves, ground cinnamon, ginger, cardamom, nutmeg, and salt.

Gradually add the dry ingredients to the wet mixture, stirring until well combined.

Fold in the lemon zest and whole milk until the dough comes together.

Chill the dough for at least 30 minutes if it's too soft to roll out.

Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

Roll out the dough on a floured surface and cut into desired shapes.

Place the cookies on the prepared baking sheets and bake for about 12-15 minutes, or until the edges are firm.

For the glaze, mix the powdered sugar with approximately 2 tablespoons of milk until smooth.

Once the cookies have cooled, dip them in the glaze and allow to set.
