Preheat the oven to 400°F (or 450°F for better baking).
In a bowl, combine 6 cups of flour, 3 tablespoons of baking powder, and 1/2 teaspoon of salt. Stir the dry ingredients together.
Add 1/4 cup of lard to the flour mixture and squish it into the flour until it resembles pea-sized pieces.
Pour in 3 cups of lukewarm milk, making a well in the center of the dry ingredients before stirring.
Once the mixture becomes too hard to stir with a spoon, use your hands to knead it, adding a little flour to your hands to prevent sticking.
Shape the dough into an oval and flatten it on a greased cookie sheet, ensuring it is not too thick.
Use a fork to poke holes in the dough to create air pockets.
Place the shaped dough in the preheated oven and bake for 35 minutes at 450°F.
Once baked, remove the bannock from the oven and let it cool in the pan for a few minutes to prevent moisture buildup.
Serve the bannock warm with butter and jam.
