Haitian White Rice, or Diri Blan, is a staple in Haitian cuisine, often served alongside meat and vegetable dishes. It symbolizes hospitality and is a common feature at family gatherings and celebrations. In modern times, it has gained popularity beyond Haiti, with variations appearing in Caribbean and Latin American cuisines.

Crush 1 garlic clove in a mortar and pestle until finely crushed.
Add 1/3 cup of vegetable oil to a pot and turn the heat to medium-high.
Test the oil's readiness by sprinkling a little water into it; it should crackle gently.
Add the chopped scallion to the hot oil and cook gently to avoid burning.
After a few seconds, add the crushed garlic and stir for a few seconds.
Add 3 cups of water to the pot and stir gently.
Cover the pot and allow the water to come to a boil.
Once boiling, add 1 teaspoon of salt, 1/4 teaspoon of accent, and 3 tablespoons of salted butter to the pot.
Rinse 2 and 1/4 cups of white rice at least three times until clean.
Add the rinsed rice to the boiling water, ensuring no rice is left behind in the bowl.
Gently stir the rice to level it out and loosen any clumps.
Taste the rice water to ensure it has enough salt and butter flavor before covering the pot again.
Reduce the heat to slightly above medium and partially cover the pot to allow it to boil.
Once the water has dissolved (about 4 to 8 minutes), stir the rice to incorporate any remaining water.
Cover the pot tightly and reduce the heat to low, allowing the rice to cook for 18 to 22 minutes.
