1 lb turkey
1 cup white onion, chopped
2 tablespoons curry powder
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme
1 tablespoon chicken seasoning
1 teaspoon salt
3 cloves garlic, minced
1 tablespoon ginger, minced
2 cups basmati rice
4 tablespoons butter
1/2 cup green onions, chopped
1 cup fresh vegetables (carrots, green beans, green bell pepper, sweet corn)
1 habanero pepper, whole
8 oz beef liver
1/4 cup oil

Clean the turkey and add it into a pot with chopped white onion.

Add curry powder, fresh rosemary, fresh thyme, chicken seasoning, salt, garlic, and ginger; mix well.

Cover the pot and allow the turkey to sweat out its moisture for about 15 minutes.

After 15 minutes, mix the turkey and add some water; cover and cook until done, about 20 minutes.

Separate the meat from the stock and strain the stock to remove ginger chunks and bones.

Pour boiling water into the rice and let it soak for about 3 minutes; then pour out the hot water and rinse multiple times with room temperature water until clear.

In a pot, melt butter and add the washed rice; fry for about 6-7 minutes to toast the rice.

Add the prepared meat stock and additional water if necessary; add chopped green onions and adjust seasoning as needed.

Cover and cook until the rice is about 70% done, about 25 minutes; then remove the green onions and fluff the rice to release steam.

Prepare fresh vegetables by washing them in salted water, then chop them: peel and chop carrots, cut green beans, slice green bell pepper, and chop habanero pepper.

Parboil the beef liver for a few minutes, then rinse and cook it with seasoning and a bit of water until done.

Fry the cooked turkey in oil with some onion until golden brown; scoop it out and reduce the oil.

In a wok or pan, heat oil and fry finely chopped onion for about 30 seconds; then add grated ginger and raw sweet corn.

Once the corn is almost cooked, add green beans, habanero pepper, and green bell pepper; season with white pepper and chicken seasoning, and fry for 2-3 minutes.

Add the liver and carrots to the veggies and toss for about 2 minutes before adding the rice.

Add the rice to the veggies and stir-fry everything together.
