Measure out 1 cup of black eyed peas and soak it for a few hours.

Prep the ingredients: chop 1 carrot, 1 celery stalk, half of a large onion, 1 hot pepper, and 1 bell pepper.

Cut the beef or chicken into cubes, seasoning with salt, black pepper (about 1/2 tsp), and 1/2 cup of green seasoning. Marinate for a minimum of 30 minutes.

In a large pot over high heat, add 2 tbsp of oil and 6 tbsp of brown sugar, allowing it to bubble and darken.

Once the sugar has darkened, add the marinated meat to the pot and raise the heat to high, stirring to coat the meat with the browning.

Cook the meat until it is about 70-75% cooked, then check the black eyed peas to see if they are soft (about 11 minutes in the pressure cooker).

Add 2 1/2 cups of boiled rice (rinsed several times) to the pot along with the chopped vegetables and drained black eyed peas (about 2 cups). Stir to combine.

Bring the mixture to a boil, then cover and reduce the heat to low, cooking for about 20-30 minutes until the rice reaches the desired texture.
