Sirloin Steak with Dijon-Port Sauce

Take the sirloin steak out of the fridge and allow it to come to room temperature.
Season both sides of the steak with salt and freshly milled black peppercorns, using a generous amount.
Place a frying pan on high heat and add oil, allowing it to heat for about 4 minutes.
Sear the steak for 4 minutes on one side, then flip it and cook for another 3.5 minutes on the other side.
Add a knob of butter to the pan along with one clove of garlic and fresh rosemary to infuse flavor.
Scoop the oil over the steak while it cooks to help crisp the top.
Once cooked, remove the steak from the pan and let it rest for about 10 minutes.
Serve the steak on a bed of rocket leaves, seasoned with salt and pepper, and drizzle with the flavored butter from the pan.
Add shaved parmesan cheese on top of the steak before serving.
