Start with 1 pound of sirloin steak, preferably about 1 inch thick (2.5 cm) for juiciness and caramelization.
Season the steak with mold and salt and freshly ground black pepper, using a bit more pepper than usual for beef.
Set the heat to high and wait for the pan to get hot enough.
Place the steak directly into the hot pan without adding oil, as the steak has oil on it.
Cook the steak for about 3 minutes until it has a nice caramelization on one side.
Flip the steak and cook the fat a bit for added flavor.
Reduce the heat to medium after flipping the steak and add butter, 1 sprig of thyme, 1 sprig of rosemary, and 2 cloves of garlic (crushed with the palm of your hand) to the pan.
Baste the steak with the melted butter using a spoon, ensuring to keep the temperature lower to avoid burning the butter.
Remove the steak from the heat when it reaches about 60 degrees Celsius and let it rest on a plate for about 5 minutes.
Use the remaining butter in the pan to make garlic butter by adding grated garlic, heating it briefly, and mixing it with the juices from the resting steak.
