Start with a quart size jar for about four servings.
Add 1 cup of uncooked rice to the bottom of the jar.
Layer in instant black beans and sweet corn.
Add both red and green bell peppers and green chilies for flavor.
Include chopped onions and Lighthouse brand freeze-dried red onions.
Add tomato powder for flavor.
Incorporate seasonings: chicken bouillon, cilantro, cumin, and Goya brand Adobo seasoning.
Use a sandwich baggie to keep the protein separate; add beef dices to the bag.
Seal the baggie and include an oxygen absorber in the jar.
Label the jar and include cooking instructions.
When ready to prepare, remove the bag of beef dices and place them in a small pan.
Add about 1 1/2 cups of water to the beef dices (adjust if using less beef).
Stir and bring to a gentle boil.
In a medium to large pan, heat a couple of tablespoons of neutral flavored oil (avocado oil).
Add the jar of rice to the heated oil to toast the spices and coat the rice grains.
Stir the rice and spices for about 2 minutes, then add 2 3/4 cups of water to prevent burning.
Bring the rice to a boil, stir, then cover and reduce heat to low for 20 minutes.
After about 15 minutes, check the beef dices for tenderness; if tender, boil off excess liquid.
If not tender, add more liquid and continue cooking until tender.
Once tender, add 1 tablespoon of butter to the beef dices and stir to coat.
After 20 minutes, fluff the rice and add 2 packets of True Lime (if desired).
Taste and adjust seasonings, adding salt if needed.
Serve by placing a good amount of rice in a bowl and topping with steak bites.
Optional toppings: avocado, sour cream, salsa, cilantro, and crunchy tortilla chips.
