Clean one chicken thigh thoroughly.

Heat 1 tablespoon of olive oil in a pan.

Add the cleaned chicken thigh to the pan.

Season the chicken with black pepper on one side, then flip and season the other side.

Cook the chicken until both sides have color, then add water to cover the chicken.

Cover the pan and let it cook for about 40 to 45 minutes, adding more water if necessary.

After 40 minutes, transfer the cooked chicken to a working board and remove the skin (optional).

Flake the chicken meat off the bones and transfer it back into the pan with the stock.

Add chopped carrots, red, yellow, and green bell peppers, celery, onions, and parsley to the pan with the chicken stock.

Cover the pan and let the vegetables steam for about 4 to 5 minutes.

After 4 minutes, add parsley to the mixture and cover again, letting it simmer for another 2 to 3 minutes.

Add about 1/4 cup of sea salt to the mixture and stir to combine everything well.

Turn off the heat and let the mixture cool slightly before blending.

Transfer the mixture into a blender and blend until smooth and silky.

Pour the blended mixture into ice cube trays and freeze overnight or for 4 to 6 hours.

If you don't have ice cube trays, you can use a plastic container to freeze the mixture and cut it into preferred shapes later.
