The combination of split peas and ham creates a rich, savory flavor that is both satisfying and economical. Hit sauté on the Instant Pot and add about half a tablespoon of extra virgin olive oil.
Sauté 1 large finely minced yellow onion, 3 finely diced stalks of celery, and 2 minced large carrots until soft.
Add 2 teaspoons of minced garlic and let it toast for a few seconds.
Hit cancel to turn off the sauté function and deglaze the inner pot with 2 cups of water, scraping up any brown bits.
Add 4 cups of low sodium chicken broth, 2 teaspoons of seasoned salt, 1 teaspoon of dried thyme leaves, 1/2 teaspoon of crushed black pepper, and 2 bay leaves to the pot.
Rinse 1 pound of dried split peas and add them to the pot.
Add the leftover ham bone to the pot.
Seal the Instant Pot and set the cooking time to 15 minutes on manual or pressure cook.
After cooking, allow pressure to release for at least 15 minutes before opening the pot.
Remove the ham bone, let it cool, then cut or tear off the meat and add it back to the soup.
Remove the bay leaves and serve the soup.
