Instant Pot Split Pea Soup

Traditionally made with ham, this vegetarian version highlights the split peas' natural creaminess and flavor. Often enjoyed during colder months, it has become a staple for meal prep due to its simplicity and nutritional value. Today, variations abound, with many opting for different spices and vegetables to suit their tastes.

Start by peeling and dicing 2 potatoes, rinsing them afterward.
Chop 2 stalks of celery by cutting them in half and dicing them.
Scrub 2 carrots and chop them into bite-sized pieces without peeling.
Chop 1 yellow onion by cutting off both ends, peeling it, and dicing it into small pieces.
Add the chopped potatoes, celery, carrots, and onion into the Instant Pot.
Add 2 cups of split peas into the pot.
Add 1 teaspoon of dried thyme, 1 teaspoon of dried marjoram, and 1 teaspoon of smoked paprika to the pot.
Add 1 teaspoon of liquid smoke and 2 bay leaves to the mixture in the pot.
Close the lid of the Instant Pot and set it to high pressure for 15 minutes.
Once the cooking time is complete, allow for a natural release for 10 minutes, then quick release any remaining pressure.
Remove the bay leaves from the soup and stir well.
