4 cups shredded Cheese (Swiss, Monterey Jack, Gruyere or Mozzarella or a mix)
2 Green Onions, cut on bias

Combine all Spätzle ingredients, mix to a smooth batter.

Rest the batter while bringing a large pot of water to a boil, adding a good pinch of salt.

Push batter (in batches) through the back of a grater or spätzle maker.

Let it come up to a boil, stir, then remove from heat and drain water, setting aside.

Melt 2 tbsp butter in a medium skillet, add onions, and season with a pinch of salt and pepper.

Caramelize the onions and remove some for topping.

To the remaining onions, add nutmeg, parsley, and milk, combine and keep warm.

In a large skillet on high heat, melt 1 tbsp butter, add spätzle, and crust them lightly.
