Drop 3.5 cups of flour into a larger pan with salt, pepper, and nutmeg.

Stir in the egg mixture into the flour with a plastic or wooden spoon.

Keep stirring; it does not have to be smooth and it's okay if it still has lumps.

Place some plastic foil on top and let rest in the refrigerator for 30 minutes or longer.

Boil a large pot of water and rinse hot water through the Spätzle maker first.

Add the batter, 1/2 cup at a time, and keep repeating while pressing lightly.

Remove with a slotted spoon and rinse with ice cold water.

Heat the oven to 400 F.

Butter a casserole dish or pan, and alternately add cheese and Spätzle noodles inside.

Bake at 400 F for at least 20 minutes.

Add some fried onions, chives, or parsley on top and serve.
