Add 300 grams of flour, 3 eggs, 150 milliliters carbonated water, and 1 teaspoon of salt into a mixing bowl.

Use a mixer with dough hooks or a food processor to mix the ingredients until a tough and hard tearing spaetzle batter forms.

The batter is perfect when it bubbles and viscously runs from the stirring hook.

Peel 2 onions and cut them into thin rings.

Peel the other 2 onions and chop them finely.

Cut chives into small rings.

Heat up a pan and add a flake of butter.

Add the onion rings and fry over low to medium heat for about 15 - 20 minutes, stirring from time to time until all onion rings are golden brown.

Heat up a large pot with salted water.

Once the water starts boiling, give some spaetzle batter onto a wooden board.

Use a dough scraper to scrape thin and oblong noodles from the batter.

Dip the tip of the dough scraper into the boiling water from time to time to make scraping easier.

Once the noodles float to the water surface, they are ready and can be taken out using a ladle.

Place the noodles in a colander and rinse thoroughly with cold water, then let drain well.

Heat up a second pan and add a flake of butter.

Fry the chopped onions in the second pan while stirring occasionally for a few minutes until they are glassy.

Add the drained spaetzle noodles to the pan with the fried onions and fry them while turning/tossing occasionally for about 5 - 6 minutes until the noodles are lightly browned here and there.

Season vigorously with salt and pepper.

Spread grated cheese on top (Emmental and Mountain Cheese) and fold in until cheese pull strings form.

Serve the Cheese Spaetzle immediately on plates, garnished with braised onions and chive rolls.
