5 onions, chopped in rings
3 tbsp. all purpose flour
1 tsp. salt
2 tbsp. oil
400g flour for pasta
4 eggs
1 pinch of salt
125-150ml warm water
1 slice of smoked belly / bacon, chopped in small cubes
50g butter
250g grated cheese (Emmentaler)

Mix chopped onions with all purpose flour and salt.

Fry onions in oil slowly while turning them constantly.

Mix flour for pasta with eggs, add a pinch of salt, and warm water while beating the dough for at least 3 minutes.

Fry chopped smoked belly/bacon in a pan without oil until crispy, then add butter.

Boil a pot of salted water.

Use a Spätzle slicer to make the Spätzle, filling the slicer once at a time and waiting for them to float to the surface before draining.

Mix each portion of drained Spätzle in the pan with bacon and fry together until all dough is processed.

Top with grated cheese and cover until melted, then add fried onions as topping.
