3 Shallots
200 g Mushrooms
2 Big potatoes
2 Garlic bulbs
800 ml Vegetable stock
75 ml Heavy cream
Fresh thyme

Cut off the top of 2 garlic bulbs. Add some olive oil, salt and black pepper. Wrap this in silver foil and add this in a preheated oven at 180℃ for 15 minutes.

Cooking the shallots in some oil.

Add sliced mushrooms and cooking this till the mushrooms starts to get some color.

Add cubed potato and cook this on high heat for 4 minutes.

Add vegetable stock to it and let it cook for 20 minutes.

After 20 minutes add the roasted garlic and blend this till smooth.

In the process of blending you can add the heavy cream.

Serve with olive oil, black pepper and fresh thyme.
