Lemon Shrimp Skewers

8 wood skewers
2 Tbsp avocado oil
1/4 cup freshly squeezed lemon juice
1 teaspoon sea salt
4 cloves garlic, minced
2 tbsp fresh chopped parsley
1 lb wild-caught shrimp, peeled and deveined
2 lemons, sliced
Salad, for serving

Soak the skewers in water for at least 20 minutes before serving.

In a large bowl, combine the avocado oil, lemon juice, sea salt, garlic, and parsley.

Toss with the shrimp, and let rest for 10-15 minutes.

Thread shrimp and lemon slices onto the skewers.

Heat a large skillet over medium high heat.

Cook shrimp skewers 3-4 minutes per side or until pink and cooked through.
