Measure out 1.5 cups of water for every 1 cup of rice.
Boil the djon djon mushrooms in the water for about 15 to 20 minutes until the water turns a deep black brown color.
Prepare the rice base by adding olive oil, chopped onions, chopped green peppers, and ipes to a cooking pot and sauté for about 3 to 5 minutes until golden brown.
Add green peas or lima beans to the pot and sauté for another 3 to 5 minutes.
Add crushed cloves pepper and optional Maggie bouillon chicken cubes for flavor.
When the peas are halfway cooked, add in the djon djon water and bring it to a boil. Taste the water and adjust seasoning if necessary.
Add butter, fresh thyme, parsley, and bay leaves to the pot.
Wash the rice with cool water until the water runs clear, then add it to the boiling pot and mix well.
Cook the rice on medium-high heat for about 5 to 7 minutes until all the water is absorbed.
Once the rice is halfway cooked, cover it and reduce the heat to low, cooking for about 25 to 30 minutes.
