Pour sour cream into a thick bottom pot.
Heat sour cream on the stove until it comes to a gentle simmer, about 10 minutes.
Add half of the flour to the simmering sour cream and stir until blended.
Let it simmer for a couple of minutes until fat separates from the sour cream.
Skim off the fat that has been released from the sour cream and reserve it in a bowl.
Add the remaining flour to the pot and stir vigorously to combine, cooking for another minute.
Add whole milk to the mixture and stir vigorously until well combined, ensuring not to leave the stove.
Add a pinch of salt and mix it all together until incorporated.
Pour the mixture into a bowl for serving.
Top the porridge with a good scoop of sugar, sprinkle with cinnamon, and drizzle the reserved fat on top.
