Combine bread flour, instant yeast, and kosher salt in a food processor.
Add Greek yogurt, honey, and water, and mix until it forms a ball.
Knead the dough a few times to bring it into a ball.
Divide the dough into two pieces and shape each into a flat ball.
Transfer to a baking sheet and cover with plastic wrap, letting it sit for 1 to 1.5 hours to double in size.
Roll out one piece of dough into a 6 by 12-inch flatbread.
Prepare the topping by whisking together olive oil, za'atar, and sesame seeds.
Preheat the oven to 500°F (260°C) with a baking stone if available.
Transfer the flatbread to a pizza peel dusted with semolina flour.
Spread the topping mixture over the flatbread.
Bake for 7 to 9 minutes until golden brown.
