Salmon Jerky

2 pounds salmon fillets
1/4 cup soy sauce
1/4 cup brown sugar
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)

Preheat your oven to 175°F (80°C).

Line a baking sheet with parchment paper or a silicone mat.

In a bowl, mix together the soy sauce, brown sugar, smoked paprika, garlic powder, onion powder, black pepper, and red pepper flakes until the sugar is dissolved.

Slice the salmon fillets into thin strips, about 1/4 inch thick.

Place the salmon strips in a large resealable plastic bag or shallow dish and pour the marinade over them, ensuring all pieces are well coated.

Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

Remove the salmon from the marinade and pat dry with paper towels to remove excess moisture.
