Salmon Jerky

2 pounds salmon fillets
1/4 cup soy sauce
1 teaspoon garlic powder

Take the store-bought salmon out of the package and rinse it off.

Pat the salmon dry.

Cut the salmon in half, as the fillet is quite long.

Cut the salmon into strips about half an inch wide using a very sharp knife.

In a bowl, combine teriyaki sauce (12-ounce bottle) and garlic powder to create the marinade.

Mix the marinade with the salmon gently using your hands to avoid breaking apart the soft meat.

Let the salmon sit in the marinade for 15 minutes.

Hang the salmon on the oven rack or bamboo skewers, draining all excess marinade.

Cover the bottom of the oven with parchment paper or foil to catch drippings.

Place a wooden spoon or spatula in between the oven door to allow airflow during drying.

Set the oven to the lowest temperature (170°F) and let the salmon dry for about four hours.
