Whole wheat flour adds more nutrients.

Avocado oil is healthier, while vegetable oil is more budget-friendly.
Put 4 cups of water in a bowl.
Add 1 tablespoon of active dry yeast to the water.
Add about 2 tablespoons of honey to the mixture and whisk it together.
Add 8 cups of bread flour to the mixture and mix it together, making a well in the center.
Pour 3/4 cup of olive oil into the well.
Add 2 tablespoons of kosher or sea salt to the mixture.
Mix the dough on low speed using a dough hook until fully incorporated.
Prepare a bowl with olive oil by drizzling it around the edges to prevent sticking.
Transfer the dough into the oiled bowl.
Cover the bowl with plastic wrap and let it rise for 2 hours, stretching the dough every 30 minutes.
After 30 minutes, stretch the dough and return it to the bowl, repeating this process for 2 hours.
Minced about 1/2 to 1 cup of garlic using a mincing tool.
Chop black olives finely for later use.
After 2 hours of stretching, prepare a jelly roll pan by drizzling 3/4 cup of olive oil on the bottom.
Transfer the dough to the jelly roll pan, spreading it out.
Preheat the oven to 350°F.
Dimple the surface of the dough with your fingers and sprinkle with Italian seasoning and minced garlic.
Let the dough rise briefly before baking.
Bake the focaccia in the oven until golden brown.
