Welcome to the kitchen and introduction to focaccia bread.
Gather ingredients: 4 cups bread flour or all-purpose flour, 2.5 cups warm water, 2.5 teaspoons active dry yeast, 1 tablespoon honey, 1 bulb garlic, Sicilian flaky sea salt, fresh rosemary, and 1/4 cup extra virgin Italian olive oil.
In a container, mix 2 cups of warm water with a heaping tablespoon of salt and stir until dissolved.
In another container, dissolve 2.5 teaspoons of active dry yeast in 1/2 cup of lukewarm water, then add 1 tablespoon of honey and stir gently.
Set the yeast mixture aside to activate.
Sift 4 cups of flour into a large bowl.
After 10 minutes, make a well in the flour and pour in the dissolved yeast and salt water.
Mix the dough with a silicone bowl scraper, adjusting with more liquid or flour as necessary for consistency.
Let the dough rest for 5 minutes to hydrate the flour.
Prep the garlic by cutting the bulb into 15-20 pieces and peeling them.
Place the peeled garlic into a saucepan and add 1/4 cup of extra virgin Italian olive oil and a pinch of salt.
Cook the garlic on the lowest heat possible until softened, stirring occasionally.
