Measure flour using a scale and add to a medium to large bowl.
Add warm water, yeast, and salt to the bowl and mix gently until a dough forms.
Add olive oil to the dough and mix gently, ensuring all flour is incorporated.
Cover the bowl with film and a kitchen towel, then refrigerate for 18 hours to 3 days.
After 24 hours, remove the dough from the refrigerator and observe its growth.
Grease a square casserole dish with butter or oil.
Gently slide the dough into the greased baking dish and cover it to rest for 2 hours at room temperature.
Dimple the surface of the dough with fingers and garnish with olive oil, rosemary, and salt.
Preheat the oven to 400°F and bake for 30 to 40 minutes until golden brown.
