Start with 1 cup of dark sugar, not granulated sugar.

Add 2 cups of refined cornmeal to a bowl.

Peel and prepare 0.5 pound of yellow yam, 2 pounds of sweet potato, and 0.5 pound of dashing (malanga cocoa).

Break open a whole coconut to extract the water, ensuring it has water inside before purchasing.

Grate the coconut using a grater, as we don't use blenders for this.

After grating, divide the coconut into two parts and extract the milk by squeezing it with water for about 30 seconds.

Strain the coconut milk using a strainer, discarding the leftover coconut pulp.

Peel the sweet potato and yellow yam, and prepare them for cooking.

Combine the grated coconut, cornmeal, dark sugar, cinnamon powder, nutmeg, vanilla extract, and almond extract in a mixing bowl.
