4 large apples
1/4 cup water
1 tablespoon lemon juice
1 teaspoon vanilla seeds
1 cup sugar
1/2 cup butter
1/2 cup breadcrumbs
1/4 cup chopped almonds
1/4 teaspoon salt
1/2 cup heavy whipping cream
fresh mint for garnish

Peel the skin off the apples.

Cut the apples into dice of around 2 x 2 cm.

Add apples to a pot along with water and lemon juice, and vanilla seeds.

Add sugar to the pot.

Place on medium heat and let it come to a boil.

Cook for 10 - 15 minutes until you have a nice compote with some apple pieces for texture.

Remove the vanilla pod from the compote before serving.

Leave the compote to cool off.

Melt butter in a pan.

Add sugar, breadcrumbs, and chopped almonds to the pan.

Fry for a couple of minutes until nice and golden brown.

Add a pinch of salt to the breadcrumb mixture.

Whip heavy whipping cream.

Assemble the dessert by layering apple compote, breadcrumb mixture, and whipped cream until the top.

Finish with crunchy breadcrumbs and a green leaf, like fresh mint.
